When I woke up this morning it was cold and foggy out...seemed like the perfect day to enjoy some warm bread. So I mixed up some of our favorite banana bread. I got the recipe from my mom when I got married. It is the one she made for me when I was growing up.
To make the bread sweet and moist, I use bananas that have been frozen. (When we have really ripe bananas, I just throw them in the freezer to save for the banana bread.) Now they look REALLY gross when they start to defrost but they really make the bread wonderful.
1 stick of butter, 3/4 cup of sugar, 2 eggs, 3 bananas (mashed well) 2 cups flour, 1 teaspoon baking soda, 1 teaspoon vanilla.
Heat oven to 350 degrees. Cream butter and sugar together. Add in eggs one at a time while mixing. Mix in bananas. Mix in flour and baking soda. Mix in vanilla.
Here are my personal tips~
I like to double the recipe to get 2 loaves of bread....it is just as easy to make two as it is to make one. They get eaten very quickly, so it is nice to have some left for the next day!
I also like to grease then sugar the pans instead of flour. I use chunky raw sugar. It gives the bread a sweet crunchy crust. Then when the bread has baked for about 45 minutes, I top the bread with more raw sugar and continue baking until tooth pick comes out clean.
